This innovative encapsulation technology aims to significantly enhance the viability and functionality of probiotics by employing a multi-layered protection strategy. The method involves encasing probiotics within a micellar casein core, which is subsequently coated with inulin and trehalose. This structure is fortified through dual crosslinking using ionic interactions and covalent bonds, and finally embedded within a gelatin-pectin gel matrix. This comprehensive approach provides a robust barrier against environmental stressors such as heat, moisture, and pH variations, and is particularly suitable for developing shelf-stable probiotic gummy candies.
