This research introduces an encapsulation technology that enhances probiotic stability in low-pH beverages. By using biopolymers, it ensures probiotics remain viable under acidic, thermal, and gastrointestinal conditions, improving product shelf-life and efficacy.
Probiotics are increasingly popular for their health benefits, but their viability in low-pH beverages is a significant challenge. This research proposes an innovative encapsulation technology using biopolymers to stabilize and target the delivery of probiotics. This method protects probiotics from harsh acidic, thermal, and gastrointestinal conditions, ensuring their effectiveness and prolonged activity in the digestive system. The encapsulation process is designed to release probiotics at the optimal site within the gastrointestinal tract, enhancing their health benefits.
Key features:
The encapsulation technology is currently at Technology Readiness Level 3. This indicates that experimental proof-of-concept has been achieved, and further validation phases are planned to assess the morphological, molecular, and structural attributes of the encapsulated probiotics. Subsequent phases will evaluate their bioactive and technological properties under simulated conditions, including storage in low-pH beverages.
