Research platform leveraging microbial transglycosidase enzymes to produce alpha-glycosylated steviol glycosides with improved solubility and pH stability. Differentiates from plant-derived beta forms and supports development of new sweetener and functional material formulations.

Overview

This research focuses on the enzymatic production of alpha-glycosylated steviol glycosides using transglycosidase enzymes derived from various microorganisms. The approach aims to improve the solubility and pH stability of steviol glycosides compared to conventional plant-derived beta forms. By exploring a library of glucosylated steviol derivatives built from precursors such as rebaudioside, stevioside, and rubusoside, the work seeks to create differentiated ingredients for food, beverage, and functional material applications.

Technical specifications
  • Enzymatic approach: Uses microbial transglycosidases to attach glucose units via alpha linkages, in contrast to the beta linkages found in plant-derived steviol glycosides.
  • Precursor library: Maintains a working collection of glucosylated steviol derivatives derived from rebaudioside, stevioside, and rubusoside to evaluate structural and functional variation.
  • Target properties: Emphasizes pH stabilization and reduced pH sensitivity as primary performance metrics, alongside improved solubility.
  • Differentiation strategy: Positions alpha-glycosylated forms as a distinct class of steviol derivatives that may offer formulation advantages over beta-form equivalents.
Technology readiness level

The research is at an early-to-mid stage of development, centered on enzyme screening across multiple microbial sources and characterization of resulting glycosylated derivatives. Future validation efforts are directed toward quantifying pH stability and sensitivity improvements, with the goal of establishing a foundation for new material development and downstream formulation trials.

About Chonnam National University

Chonnam National University is a large, comprehensive public research university serving southwestern South Korea through campuses in Gwangju and Yeosu. Its dual-campus structure gives companies access to a broad research base while maintaining close ties to the region’s public institutions, hospitals, and industrial communities. The university’s industry-university cooperation graduate school and R&BD Foundation provide established channels for sponsored research, joint development, technical consultation, intellectual-property management, licensing, and commercialization. Its university hospital system supports clinical research and translation, while the Yeosu campus extends collaboration into a coastal and industrial setting. Research is supported by competitive funding from the National Research Foundation of Korea and other Korean government ministries and agencies.
