Innovative process to enhance desirable flavors like chocolatey, nutty, and fruity in alkalized cocoa powder while minimizing unwanted notes through optimized Maillard chemistry using local ingredients.

Overview

This advanced solution focuses on enhancing the flavor, taste, and color of alkalized cocoa powder by modifying Maillard chemistry during key processing stages such as roasting and conching. The approach uses local ingredients rich in polyphenolic compounds, polysaccharides, and other Maillard reaction precursors to develop cocoa powder with improved chocolatey, nutty, and fruity notes while reducing bitterness and undesirable flavors. This innovation is particularly valuable for the food industry aiming to produce high-quality cocoa products with enhanced sensory profiles.

Technical specifications

Key features:

  • Utilizes local Thai ingredients to enhance flavors, offering a clean label solution
  • Incorporates peptide enhancement and organic acid modulation for improved taste
  • Customized roasting profiles developed to optimize flavor, taste, and color
  • Employs advanced analytical techniques such as GC-MS and GC-O for detailed flavor analysis
  • Supports predictive modeling to correlate processing parameters with flavor outcomes
Technology readiness level

This technology is at TRL 4, indicating that it has been validated in a laboratory environment. The next steps involve process optimization and sensory evaluation using Quantitative Descriptive Analysis (QDA) by trained panels to refine the approach for commercial applications.

About FoodInnovate

FoodInnovate Thailand is a regenerative ecosystem design studio and consulting firm based in Bangkok that integrates soil biology, indigenous crops, and data-backed climate strategies to transform food systems. The organization operates a proprietary Ground2Gut framework, which connects soil health, human well-being, and social impact through regenerative design. Their technical capabilities include food ingredient technology, such as the development of functional food matrices, plant-based protein stabilization, and advanced emulsion systems. They also manage the BTLLAgroforestry field site in Ayutthaya, which serves as a laboratory for agroforestry trials, carbon sequestration monitoring, and biodiversity research, providing a foundation for their evidence-based food innovation and climate resilience initiatives.

By bridging the gap between scientific research and community-led application, FoodInnovate supports small-scale producers, policymakers, and consumers in creating more transparent and nourishing food systems. Their work addresses critical challenges like climate resilience in agricultural basins, nutritional architecture for specific health needs—such as elderly care recovery—and the development of value-added functional ingredients from local commodities like rice and winged beans. Through their initiatives, including educational e-courses and impact dashboards, they empower stakeholders to participate in the journey from ground to gut, ultimately aiming to improve both planetary health and human equity through sustainable, data-driven food solutions.
