This innovative process utilizes high-oleic vegetable oils and a two-step enzymatic interesterification to produce Cocoa Butter Equivalent (CBE) with tailored melting profiles for industrial applications. The method enhances efficiency and yield, matching the properties of cocoa butter.
Chonnam National University presents a groundbreaking solution for the industrial-scale production of Cocoa Butter Equivalent (CBE) using a novel two-step enzymatic interesterification process. By leveraging high-oleic vegetable oils rich in triolein and optimizing the ratio of saturated ethyl esters, this technology efficiently synthesizes CBE that closely mimics the melting profile of natural cocoa butter. This process offers customization options for various industrial applications, providing a sustainable and cost-effective alternative to cocoa butter.
This technology is currently at TRL 5, indicating that the process has been validated in a relevant environment. Further optimization and scaling are underway to advance its readiness for widespread industrial application.
Chungnam National University is a comprehensive flagship national research university in Daejeon, serving as a major public institution with broad academic scope. Its campus sits adjacent to the Daedeok R&D Special District, linking faculty and facilities to Korea’s densest concentration of government labs, corporate R&D centers, and startups. Integration with Chungnam National University Hospital in Daejeon and the newer Sejong Hospital enables clinical research, data access, and translational partnerships. Industry engagement is organized through a formal Industry–University Cooperation Foundation and an Industrial Technology Research Institute within the College of Engineering, which streamline sponsored research and prototyping with partner firms. Research is supported by competitive national funding in South Korea, and commercialization is backed by a dedicated technology licensing office and a university technology holdings company that invests in spin‑outs.
