An innovative approach using machine learning to improve the accuracy of oxidation detection in meats by analyzing color and pH changes, enhancing traditional TBA measurements.
This research presents a novel solution for detecting oxidation in meats using machine learning to analyze color and pH changes. Traditional methods rely on the TBA (Thiobarbituric Acid) assay, which measures malondialdehyde levels via color intensity changes. By integrating AI, this process can be more accurate and efficient, automating the correlation of color and pH changes with oxidative stress levels.
The solution utilizes advanced machine learning algorithms to predict TBA values based on colorimetric data and pH measurements. Key chemicals used include ABTS, which detects oxidation through color change, and O-Dianisidine, which measures peroxidase activity. These components allow for the visualization and quantification of oxidative stress in proteins and lipids, making this method suitable for meat quality assessment.
The technology is currently at TRL 2, indicating that its basic principles have been observed and reported. Further development is required to validate the solution in practical settings.
Karamanoğlu Mehmetbey University is a comprehensive public university in Karaman, Türkiye, with more than 16,000 students, about 900 academic staff, and a clear regional-development orientation. Its industry interface combines modern laboratories with a scientific and technological research center that provides testing, measurement, and analysis capabilities for companies and public-sector partners. The Project and Technology Transfer Office works with Karaman Teknopark, the Organized Industrial Zone, chambers, and local firms to develop joint R&D and external-funding opportunities. Research is supported mainly by competitive national funding, especially TÜBİTAK, alongside regional development programs. The transfer function also supports intellectual property, patents, licensing, entrepreneurship, and commercialization.
