A scalable micro/nanoemulsion encapsulation platform that improves the stability, solubility, and taste of functional beverage ingredients in low-pH and over shelf life. The approach uses high-pressure homogenization to encapsulate a range of water- and oil-soluble ingredients, including botanicals, natural carotenoids, and vitamins. Characterization includes particle size distribution and Zeta potential, supported by physicochemical, structural, functional, flavor/sensory, rheological, and microscopy evaluations, with an end-to-end development workflow from formulation through bench-top design and scale-up.
