Chonnam National University presents a novel oleogel formulation utilizing pre-treated monoglycerides and canola oil to create a stable, low-saturation fat alternative for confectionery. This formulation aims to replicate the melting behavior of traditional fats while reducing saturated fat content.

Overview

Chonnam National University introduces an innovative oleogel formulation designed for the confectionery industry. This solution aims to replicate the desirable melting behavior of traditional confectionery fats while significantly reducing saturated fat content. By leveraging canola oil, native or pre-treated monoglycerides, and lecithin, this formulation promises enhanced stability and gelation texture, making it an ideal alternative for healthier confectionery products.

Technical specifications

The research focuses on two hypotheses: First, pre-treatment of commercially available monoglycerides (MGs) with trace amounts of catalysts can promote early hydrogen bonding, resulting in a more stable crystalline network and reduced oil separation. Second, oleogel systems with sharp melting behavior near body temperature can be achieved by specific ratios of canola oil, MGs, and lecithin, combined with controlled cooling methods. Preliminary experiments have shown promising results, with oleogel systems exhibiting main melting peaks around 30-38°C.

Key features:

  • Use of pre-treated MGs and canola oil for reduced saturated fat content
  • Enhanced crystalline structure and gelation stability
  • Suitable for blending with structuring fats to achieve desired confectionery textures
Technology readiness level

The technology is currently at TRL 4, indicating that the oleogel formulation has been validated in a laboratory setting. Future validation will involve optimizing formulations through Response Surface Methodology (RSM) to ensure the oleogels meet desired rheological properties and are comparable to structuring fats used in commercial applications.

About Chungnam National University

Chungnam National University is a comprehensive flagship national research university in Daejeon, serving as a major public institution with broad academic scope. Its campus sits adjacent to the Daedeok R&D Special District, linking faculty and facilities to Korea’s densest concentration of government labs, corporate R&D centers, and startups. Integration with Chungnam National University Hospital in Daejeon and the newer Sejong Hospital enables clinical research, data access, and translational partnerships. Industry engagement is organized through a formal Industry–University Cooperation Foundation and an Industrial Technology Research Institute within the College of Engineering, which streamline sponsored research and prototyping with partner firms. Research is supported by competitive national funding in South Korea, and commercialization is backed by a dedicated technology licensing office and a university technology holdings company that invests in spin‑outs.
