We currently have a PhD student working on a doctoral research project. The central challenge of this project is to develop an integrated framework for data collection and analysis, aimed at overcoming the limitations of conventional acceptability studies, which are often conducted in isolation.

The project adopts a multidimensional perspective grounded in situations that closely reflect real-life conditions. To achieve this, particular attention is given to the acts of purchase and repurchase. When consumers encounter a product for the first time—whether in a physical retail environment or online—and decide whether or not to engage with it among the available alternatives, they rely on rapid cognitive and affective processes that strongly influence satisfaction and the likelihood of repurchase. The project proposes the development of an experimental platform capable of reproducing, within a controlled yet realistic environment, the different stages of the consumer journey. The aim is to support both academic research on food-related consumer behavior and the development of products that are better aligned with consumer needs, preferences, and actual usage patterns.
