A fermentation-based process that transforms microalgae into palatable powders, tablets, and beverages, addressing the common challenges of fishy odor, undesirable color, and poor texture to enable broader use as a nutrient-dense food ingredient.
Microalgae are widely recognized as a nutrient-dense food source rich in bioactive compounds that may benefit human health. However, their natural color, fishy taste, and odor have limited consumer acceptance and restricted their use in food and beverage products. This solution applies a proprietary fermentation method to convert microalgae into powders, tablets, and drinks with excellent taste, smell, and texture, opening the door to wider incorporation of microalgae-based nutrition into everyday foods and beverages.
The technology is at an early-to-mid stage of development. Multiple batch experiments have been completed to optimize fermentation conditions, and work on enzyme and bacterial treatments is progressing. Product analysis to date has shown excellent results in taste, smell, and texture. The next steps require access to a GMP-compliant facility for further optimization and scale-up, as well as improved glassware and handling infrastructure to support reliable processing. The research has been supported by the National Institute of Food Technology and Entrepreneurship Management, Thanjavur.
