What we have achieved to date: (i) Benchmark Ambrosia’s proprietary technology in an industry-relevant environment (TRL6) – demonstrate and quantify the technological advantage. This has been challenged and confirmed by experts. (ii) Ensure freedom to operate, file patents in the relevant geographies. (iii) Build partnerships across the value chain, from technology partners to sugar producers, distributors, and leading F&B companies. And, (iv) produce pilot batches of allulose, share with both production partners and FMCG.

What we are aiming to achieve by 2027: (i) Obtain our own regulatory credential. Leverage the GRAS self-assessment dossier to additional geographies and conclude the enzyme’s safety assessment for EFSA. (ii) Increase allulose production capacity, first with Seprosys at our pilot plant, and later with a partner to demonstrate industrial proof-of-scale. (iii) Increase allulose-epimerase (the enzyme) production capacity to support early adopters. And (iv) use the produced allulose to enter the Japanese, South Korean, and US markets.
