Background

Consumers are increasingly seeking functional beverages that support holistic health benefits rather than simply emphasizing protein content. There is growing interest in formats that deliver protein in ways that align with the body’s needs and can be consumed throughout the day. Consumers are seeking new-to-market functional beverages that not only deliver meaningful nutrition but also maintain great taste and visual appeal. 

 

Achieving clear appearance in protein-containing beverages is a technical challenge, especially for more than 5% protein content and in ready-to-drink, low-acid (neutral pH) beverage systems. Typically, whey proteins are used for clear beverage applications. However, at neutral pH levels (low acid), there is generally an increase in turbidity and undesirable sulfuric notes in flavor and aroma after the required thermal treatment.

What we're looking for

We’re looking for protein ingredients and solutions (derived from dairy, plant, or alternative sources) that enable clear/transparent and shelf-stable beverages at neutral pH. Beverage formats may include still or carbonated, preserved or thermally treated options. We are specifically interested in ready-to-drink beverage applications.

Our must-have requirements are:
  • Solubility, clear appearance, and heat stability in low-acid systems (pH 4.5 to 7.5) after thermal treatment (140–145°C for 6 seconds)
  • Ability to deliver a minimum of 20 g protein per 14 oz serving
  • Clean taste and minimal to no off-notes (e.g., sulfur) in aroma and flavor after heat treatment
  • Food-grade
Our nice-to-have's are:
  • FDA Generally Recognized as Safe (GRAS) designation

  • Non-GMO

  • Kosher

  • Commercially available

  • Protein Digestibility-Corrected Amino Acid Score (PDCAAS) of 1

  • Min of 90% protein purity on a dry basis

  • Ready for market launch in the next 1–2 years

  • Higher TRL solutions

Why does PepsiCo focus on proteins instead of peptides? Applying Biocatalist's patented technology, we can make soluble, heat-stable, taste-tunable peptides safely in yeast for beverages in an economic manner.

I come from scientific compute, TL;DR: Model Agnostic Architecture, scores 0.0275 MAE on QM9 and maintains an 89% accuracy over 1000 steps which is SOTA. Do you guys welcome solutions on this front for mol. simulations?
